About this apprenticeship

Commis Chefs work across the hospitality industry in luxury, fine dining and gastro venues, including restaurants, hotels, pubs and event venues. Their role is to support the kitchen brigade by preparing, cooking and finishing a wide range of fresh dishes across all kitchen sections to a high standard.

They work closely with chefs, front-of-house teams, suppliers and customers. Commis Chefs are responsible for preparing food to order, following recipes and instructions, maintaining food hygiene, health and safety, and allergen standards.

They also manage stock rotation and storage, use kitchen equipment and knives safely, and help ensure efficient, high-quality kitchen operations.

This is a Level 2 apprenticeship.

What you Will Learn

  • Select and use the correct knives, tools and equipment safely, efficiently and for the appropriate task.
  • Prepare, cook and finish a wide range of fresh ingredients and dishes, including meat, fish, vegetables, sauces, soups, pasta, grains, eggs, pastries, doughs and desserts.
  • Apply a variety of cooking techniques such as grilling, frying, roasting, baking, braising, poaching and sautéing to produce high-quality dishes.
  • Select quality, seasonal ingredients, use alternative products where required and minimise waste through sustainable working practices.
  • Season, flavour, portion, plate, garnish and present dishes to meet quality, consistency and profitability standards.
  • Maintain high standards of food safety, allergen control, hygiene, health and safety, including temperature monitoring, PPE and stock rotation.
  • Identify and correct production issues, respond to feedback and complaints, and continuously improve performance.
  • Manage stock, organise workloads, prioritise tasks and contribute to efficient kitchen operations.
  • Communicate professionally, work collaboratively with colleagues, support equality, diversity and inclusion, and promote positive wellbeing.
  • Demonstrate professionalism through accuracy, attention to detail, personal responsibility, teamwork and maintaining high standards at all times.

Learning & Teaching Methods

This Level 2 apprenticeship has an approximate duration of 12 months and delivered as 6 master classes from the East Riding College, St Mary’s Walk, Bridlington, East Riding of Yorkshire, YO16 7JW.

What Next?

On completion of this programme, apprentices will be fully qualified and experienced Commis Chef. Allowing progression onto Level 3 apprenticeships such as Chef De Partie.
